Ingredients:

For the Dough:

  • 3 cups all-purpose flour
  • 1 cup toasted sesame seeds
  • 1 cup ground almonds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground anise seeds
  • 1/2 teaspoon ground fennel seeds
  • 1/4 teaspoon salt
  • 1 tablespoon orange blossom water
  • 1 tablespoon vinegar
  • Water (as needed to form a smooth dough)

For Frying:

  • Vegetable oil for deep frying

For Honey Syrup:

  • 1 cup honey
  • 1/4 cup water
  • 1 tablespoon orange blossom water

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, combine the flour, toasted sesame seeds, ground almonds, ground cinnamon, ground anise seeds, ground fennel seeds, and salt.
    • Add the orange blossom water and vinegar to the dry ingredients.
    • Gradually add water while kneading to form a smooth and elastic dough. It should not be too sticky.
  2. Shape the Chbakia:

    • Divide the dough into small portions.
    • Take each portion and roll it into a thin rope, about the thickness of a pencil.
    • Shape the rope into a spiral or an "S" shape, pressing the ends together to secure.
  3. Fry the Chbakia:

    • Heat vegetable oil in a deep fryer or a large, deep skillet to 350°F (175°C).
    • Carefully place the shaped Chbakia in the hot oil, frying a few at a time. Fry until they turn golden brown. Make sure to flip them for even cooking.
    • Once done, remove them with a slotted spoon and place them on paper towels to absorb excess oil.
  4. Prepare the Honey Syrup:

    • In a saucepan, combine honey, water, and orange blossom water.
    • Bring the mixture to a simmer over medium heat, stirring occasionally, and then let it simmer for a few minutes until it slightly thickens.
  5. Soak Chbakia in Syrup:

    • While the Chbakia is still warm, dip each piece into the honey syrup, making sure to coat it evenly.
    • Place the soaked Chbakia on a serving platter.
  6. Serve:

    • Allow the Chbakia to cool and absorb the honey syrup before serving.

Chbakia is traditionally served during the Iftar meal in Ramadan. Enjoy this delightful Moroccan treat!
