Instructions:

1. Coffee Panna Cotta:

a. In a small bowl, mix gelatin powder with cold water. Let it sit for 5-10 minutes to bloom.

b. In a saucepan, combine heavy cream, whole milk, sugar, instant coffee, and vanilla extract. Heat over medium heat until it's warm but not boiling. Stir to dissolve the coffee.

c. Add the bloomed gelatin to the warm mixture and stir until completely dissolved.

d. Remove from heat and let it cool for a few minutes.

e. Pour the mixture into individual serving glasses or molds. Refrigerate for at least 4 hours or until set.

2. Coffee Caramel Sauce:

a. In a heavy-bottomed saucepan, combine sugar and water over medium-high heat. Stir until sugar dissolves.

b. Once the sugar has dissolved, stop stirring and let the mixture come to a boil. Cook until it turns a deep amber color.

c. Remove the saucepan from heat and carefully add the brewed coffee. Be cautious, as it may splatter.

d. Return the saucepan to low heat and stir until the caramel is smooth and well combined with the coffee.

e. Allow the coffee caramel sauce to cool to room temperature.

3. Serving:

a. Once the Coffee Panna Cotta has set, spoon a layer of the Coffee Caramel Sauce over the top of each serving.

b. Optionally, garnish with whipped cream or chocolate shavings.
